Yes,, you are correct in your suppositions:
1. she is doing a "Mediterranean mooring" >> anchors dropped-out at forward and mooring lines to shore at stern;
2. she will load oil products from the Refinery over her 'stern' manifold;

Does this ship load/discharge via a stern manifold? She has both anchors out so I'd assume she would be going to Mediterranean Moor but then I notice the chicksan astern.

Dobra večer Jadran. A 'bit unusual' indeed, and I like it too. It makes a change from the endless, almost identical, product tankers churned out from South Korea. I note that this ship was built in Ukraine.

.... yeah,, I very much like (though, let me be free to say "bit unusual") design of the superstructure on this product tanker,, a rather interesting & brave attempt of the designer(s) is the 'side view' of the superstructure (on its aft part !!).
